Normal mode refers to a dungeon difficulty (TBC & WotLK) and raid size (WotLK) setting. This setting is accessed from the party or raid leader's portrait menu; currently the only other difficulty setting is Heroic mode available with TBC[1] and continued in WotLK.
Patch 3.2.0 did away with this setting, other than showing up in achievements, in favor of the following:
- Dungeon difficulty:
- 5-player mode for the Normal mode instances.
- Raid difficulty:
- 10-player mode for the Normal mode (10-man raid).
- 25-player mode for the Normal mode (25-man raid).

WotLK Patch 3.2.0 (patch date::04-Aug-2009): Changed the setting to 10 Player and 25 Player under the interface setting Raid difficulty.
